Flavor Fusion of the Caribbean

Caribbean cuisine is a fusion of flavors reflecting the influence of many cultures that lived on the islands over the centuries. From this cultural diversity, a number of spicy, bold, ethnic foods such as jerk barbecue and hot pepper sauces have emerged—which have made their way to the mainland today.

Historians believe that the Arawak Indians and later the Carib Indians from South America were among the earliest inhabitants of the Caribbean islands. The Caribs, for whom the islands are named, are credited for discovering the use of hot chili peppers to add flavor to foods.

Another Caribbean original is Jamaican jerk. This dry seasoning blend is any combination of chilies, thyme, allspice, cinnamon, ginger, cloves, garlic and onions. Jerk seasoning can be rubbed directly onto meat or blended with a liquid to make a marinade. Traditionally, chicken and pork were the most common meats to jerk; however, the seasoning is also delicious with beef, lamb, and seafood. Although there are many recipes for jerk seasoning, Jamaican food lovers agree that allspice, Scotch Bonnet peppers and thyme are the trademark ingredients.
