You skip meals to save your appetite for the party. Eat enough beforehand so you're not ravenous when you arrive.
You take some of everything on the buffet. Sample a bite if you're curious, but instead of getting lost in the sea of food, zero in on your favorites.
You stand around the food while visiting. To avoid the automatic hand-to-mouth habit, move to a place where food is outside arm's reach.
You keep a beverage in your hands at all times. Alcoholic beverages as well as non-alcoholic beverages are easily overconsumed at parties. Take breaks between beverage refills, and make some of those beverages water.
